Santa Fe Quinoa Bake

Have you tried Quinoa yet?  I have to admit, I avoided it for a long time because it just didn’t look or sound appetizing to me!  While I was doing the Ultimate Reset back in April, it was one of the key ingredients during the first week.  I really learned to love it (especially mixed in with a yummy stir fry).  This quinoa bake photo caught my eye on Pinterest and I knew you guys would love it, too.  The ingredients list consists of clean, whole foods.  You can reduce the amount of cheese if you are looking to save calories.

21 Day Fix-ers, this could easily be altered to fit your meal plan.  Just use the corresponding containers for each item and measure it out for a single serving.  Keep yours in a separate baking pan, and then you will know exactly what you are eating.  Easy peasy!


  • 1 & 1/2 cups quinoa
  • 3 cups chicken broth {Or veggie broth for vegetarian version}
  • 1 cup frozen corn
  • 15 oz. canned black beans {drained and rinsed}
  • 1 cup plain Greek Yogurt
  • 10 oz. can Rotel tomatoes, drained
  • 1/2 cup salsa
  • 2 cups Mexican blend cheese, divided


  1. Rinse your quinoa in warm water for about two minutes.
  2. Heat a large frying pan on high and add quinoa. Let cook for 1 minute to let water evaporate.
  3. Add the chicken broth and bring to a boil. Once it starts boiling, turn heat to low and let cook, covered, for 15 minutes. Remove from burner and let stand, still covered, for 5 minutes.
  4. Preheat oven to 350ºF.
  5. In a medium bowl, combine quinoa, corn, beans, yogurt, tomatoes, salsa, and 1 cup cheese and stir well.
  6. Spread into a greased 9×13 inch pan and top with the remaining cheese.
  7. Let bake, uncovered, for 22-25 minutes or until completely heated through. Enjoy.
